Crab Stuffed Shrimp

Serves 4


Ingredients:

2 oz mascarpone
1/4 lb crabmeat, minced
2 tablespoons Rothschild Apricot Mango Wasabi Sauce
Salt, to taste
Pepper, to taste
4 oz proscuitto, thinly sliced
8 raw shrimp
3 green onions, chopped

Directions:

  1. Combine first five ingredients.
  2. Peel and devein shrimp, leaving tail end intact. Slice back of shrimp to form pocket for filling. Spoon small amount of filling into each shrimp, wrap each with piece of proscuitto to secure. Bake on greased baking sheet at 375 degrees F. for 12-15 minutes or on 350 degrees F grill for 10-12 minutes.
