Parmesan Crusted Tilapia with Fennel and Onion

Ingredients:
4 fillets fresh skinless tilapia
1/3 cup mayonnaise
1/4 cup grated Parmesan
1 1/2 tablespoons fresh lemon juice
1 fresh fennel bulb, stalk removed & sliced
1 small red onion, sliced into rings
2 tablespoons olive oil
1 tablespoons fresh lemon balm
Salt, to taste
Pepper, to taste
Directions:
Preheat oven to 450 degrees F. In baking dish, arrange fennel and onion, overlapping each other. Drizzle with oil, salt and pepper.
In a bowl combine mayonnaise, cheese and lemon. Place all fish in baking dish on top of the fennel and onion. Sprinkle fish with salt and pepper, then spread cheese mixture on top of fish. Bake for about 20 minutes, or until top of fish is lightly golden. Sprinkle fresh chopped lemon balm on top before serving.
