Ingredients:
| 2 lb fresh salmon fillet |
| 1 1/2 cups brown sugar |
| 1 cup kosher salt |
| 1 tablespoon fresh cracked black pepper |
Directions:
- In 9x11 baking dish place salmon skin side down, sprinkle with pepper.
- In bowl, combine the sugar and salt, sprinkle entire mixture over salmon covering all exposed flesh. Take plastic wrap and press onto salmon.
- Put heavy cans on top to press and refrigerate overnight or for 6 hours. Remove and wipe off sugar & salt mixure, quickly rinse under cold water and cook how you like!
