Broccoli, Tomato & Feta Gratin





Serves 6
Ingredients:
| 1 tablespoon olive oil |
| 1 clove garlic |
| 3/4 cup heavy cream |
| 1/2 pecorino romano |
| 1/2 cup crumbled feta |
| Fresh Italian parsley, chopped |
| 1/2 head broccoli florets |
| 1 cup grape tomatoes |
| Salt, to taste |
| Pepper, to taste |
Directions:
- Heat olive oil in skillet on medium heat. Add garlic and sauté 30 seconds, then add cream, salt and pepper. Bring to a boil, cook 1 minute and set aside.
- Place broccoli and tomatoes in a baking dish big enough so the vegetables are spread out. Mix the cheeses into the cream and pour over the vegetables.
- Bake uncovered at 400 degrees F for 20 minutes, sprinkle with parsley and serve.
