Greek Style Rice with Gremolata





Serves 4
Ingredients:
| 2 tablespoons olive oil |
| 1/2 cup onion, diced |
| 1 cup basmati rice |
| 8 threads saffron |
| 2 cups chicken broth |
- Heat oil in saucepan on medium high heat, add onion and sweat 1 minute. Add in rice and saffron and sauté 1 minute as well. then add broth, bring to a boil, simmer and cover. Simmer for 20 minutes.
- Remove from heat and leave covered for 10 more minutes. Fluff with fork and sprinkle on gremolata just before serving.
| 1/2 cup Italian parsley, chopped fine |
| 1/4 cup fresh mint, chopped |
| 1 teaspoon red pepper flakes |
| 1 tablespoon lemon zest |
- Combine all well and set aside until use. Can be made the day before and refrigerated.
