Greek Style Rice with Gremolata





Serves 4
Ingredients:

2 tablespoons olive oil+ Add to Shopping List |
1/2 cup onion, diced+ Add to Shopping List |
1 cup basmati rice+ Add to Shopping List |
8 threads saffron+ Add to Shopping List |
2 cups chicken broth+ Add to Shopping List |
- Heat oil in saucepan on medium high heat, add onion and sweat 1 minute. Add in rice and saffron and sauté 1 minute as well. then add broth, bring to a boil, simmer and cover. Simmer for 20 minutes.
- Remove from heat and leave covered for 10 more minutes. Fluff with fork and sprinkle on gremolata just before serving.
1/2 cup Italian parsley, chopped fine+ Add to Shopping List |
1/4 cup fresh mint, chopped+ Add to Shopping List |
1 teaspoon red pepper flakes+ Add to Shopping List |
1 tablespoon lemon zest+ Add to Shopping List |
- Combine all well and set aside until use. Can be made the day before and refrigerated.
