Green Beans with Citrus Butter Sauce





Serves 6
Ingredients:
| 1 lb fresh green beans |
| 1 shallot, minced |
| 1 teaspoon olive oil |
| 1 teaspoon orange zest |
| 2 tablespoons navel orange juice |
| 2 tablespoons butter |
| Salt, to taste |
| Pepper, to taste |
Directions:
- Bring a pot of salted water to a boil. When boiling, add beans and cook 8 minutes.
- Meanwhile, sweat shallots in olive oil 3 minutes on medium heat. Then add orange juice and zest and reduce by half. Once reduced, whisk in butter and set aside.
- Drain beans and toss in citrus butter sauce and enjoy!
