Honeycrisp & Gouda Barley Risotto





Serves 4
Ingredients:
| 2 cups chicken broth |
| 1 cup 10-minute barley |
| 1 small shallot, diced |
| 1 Honeycrisp apple, peeled & diced |
| 2 tablespoons butter |
| 1/3 cup white wine |
| 1/2 cup aged gouda, grated, any kind |
| Salt, to taste |
| Pepper, to taste |
| Fresh thyme |
Directions:
- Add barley to boiling chicken broth, cover and simmer for 10 minutes.
- Add to barley, 2 tablespoons butter, honeycrisp apple, gouda, thyme, salt and pepper. Stir well until cheese melts and serve immediately!
