Honeycrisp & Gouda Barley Risotto

Serves 4


Ingredients:

2 cups chicken broth
1 cup 10-minute barley
1 small shallot, diced
1 Honeycrisp apple, peeled & diced
2 tablespoons butter
1/3 cup white wine
1/2 cup aged gouda, grated, any kind
Salt, to taste
Pepper, to taste
Fresh thyme

Directions:

  1. Add barley to boiling chicken broth, cover and simmer for 10 minutes.
  2. Add to barley, 2 tablespoons butter, honeycrisp apple, gouda, thyme, salt and pepper. Stir well until cheese melts and serve immediately!
