Thai Rice

Serves 6


Ingredients:

1 cup basmati rice
2 tablespoons oil
1 tablespoon Urban Accents Thai Garden Spice Mix
1 cup chicken broth
1 cup coconut milk
1 teaspoon salt
1 tablespoon fine minced lemongrass

Directions:

  1. In sauce pan, heat oil on high heat, add raw rice and saute 1 minute. Add broth, milk and salt. Bring to boil, turn down to simmer and cover part way. Simmer for 15-20 minutes, turn off heat and let sit covered for 10 more minutes. Add lemongrass, fluff with a fork, and serve.
