Ingredients:
3 large Idaho or russet potatoes
2 tablespoons olive oil, plus more for crisping
Kosher salt or seasoned salt, to taste
Directions:
Wash potatoes and cut into fries.
Place in microwave-safe bowl and lightly coat with olive oil and kosher salt.
Cook in microwave until just tender, about 2 min per potato. Working in small batches, fry in a large frying pan with just a little olive oil on high heat. Make sure all fries are in contact with the pan - just one layer. When 3 or 4 sides are brown remove, place on a paper towel and keep warm in an oven. Repeat with next batch.
