2/3 cup Fresh Lemon Juice, (approximately 2 large Lemons)
6 Cloves Fresh Garlic, Pressed
1 Large Onion, chopped or diced
1 teaspoon Salt
1/2 teaspoon Black Pepper
1 Gallon Size Ziploc Baggie - Freezer Style
Directions:
Marinade: Put the following prepared ingredients in the large Ziploc baggie: Olive Oil, Lemon Juice, Garlic, Onion, Salt and Pepper. Mix them well with your hand in the bag and then add the chicken drumsticks and thighs. Seal the bag tightly. Gently mix the chicken and the marinade in the bag. Once mixed well, lay the entire bag flat on a large plate or platter in the refrigerator. Let the chicken marinate overnight up to 24 hours. The longer the better!
After the chicken has marinated, it is time to fire up the grill. Preheat the grill and place chicken on the grill. Discard any remaining marinade in the bag. Then cook chicken to an internal temperature of 180 degrees F at the bone. Cooking to this temperature will allow the chicken to be cooked thoroughly to the bone.
