1 tablespoons chopped fresh parsley, or 1/2 tablespoon dried parsley
1/8 teaspoon ground nutmeg
6 cups thinly sliced potatoes (or 2 - 20 oz. bags of Simply Potatoes sliced or shredded hash brown potatoes)
3 cups cooked diced smoked ham, (Great with leftover ham!)
Chopped fresh chives, for garnish
Sea salt

Directions:
Preheat oven to 375 degrees F. Butter a 9 X 13-inch baking dish; set aside.
Preheat large skillet over medium-high heat; add butter and onions and sprinkle with seasoned salt and pepper. Cook until translucent, about 5 minutes then sprinkle with flour and stir well for about 1 minute to cook out floury taste. Whisk in heavy cream, milk, parsley, and nutmeg and season to taste with seasoned salt and pepper.
Remove from heat and stir in sliced potatoes and ham. Layer half of the potato mixture into prepared baking dish and sprinkle top with 1 cup of the shredded cheddar. Repeat with second layer; cover with foil and bake 1 hour.
Remove cover and bake another 15 minutes to brown top. Serve hot garnished with fresh chopped chives and buttered rolls on the side.
