Hot Turkey Sandwiches





Serves 4
Ingredients:
| 1 tablespoon butter |
| 1 package sliced fresh mushrooms, (8 oz) |
| 8 slices English muffin bread, lightly toasted |
| 3 cups cooked leftover turkey, diced or shredded |
| 2 cups leftover or prepared turkey or chicken gravy |
| 1/2 cup milk |
| 4 slices bacon, cooked and crumbled |
| Cranberry relish, for topping |
| Leftover mashed potatoes, if desired |
| Leftover stuffing, if desired |
| Seasoned salt |
| Freshly ground pepper |
Directions:
- Preheat large skillet over medium-high heat. Add butter and mushrooms and sauté until lightly browned, about 5 minutes. Sprinkle with seasoned salt and pepper. Stir in turkey, gravy, cream soup, milk, and bacon; bring to a boil. Reduce heat and simmer 10 minutes. Adjust seasoning, to taste.
- Meanwhile, toast the bread and reheat mashed potatoes and stuffing, if using. Place two slices of toast on each plate and top one slice with a spoonful of hot mashed potatoes and the other one with a spoonful of stuffing. Top with generously with turkey gravy and serve cranberry relish on the side.
