12 butter toasted slider buns, (Bakery Dollar or Hawaiian buns work well)
Chipotle or Southwestern flavored Mayonnaise, for serving
12 slices semi-ripe Avocado, for serving
12 slices Roma tomato, for serving
Directions:
In a large bowl, mix together the ground beef, Chorizo, chopped onion, Adobo seasoning and minced Chipotles in Adobo Sauce with gloved hands. Shape into 12 equal-sized patties.
Preheat Grill to medium-high heat. Grill burgers until juices run clear, about 4 minutes per side or until internal temperature reaches 160 degrees F. Place Pepper Jack cheese slices on top of burgers the last minute of grilling time.
To assemble burgers: spread both cut sides of buns with chipotle mayo then layer with cooked burger, avocado slices, tomato slices, and top buns.
