Dijon Mashed Potatoes





Serves 6
Ingredients:
| 3 lb. Yukon gold potatoes, peeled and quartered |
| 1 cup half and half |
| 4 tablespoons butter |
| 1/4 teaspoon ground nutmeg |
| 3 tablespoons coarse grain Dijon mustard |
| Sea salt |
| Freshly ground black pepper |
Directions:
- Place prepared potatoes in large saucepan, cover with cold water, and add 1 tablespoon salt. Cover, and place over high heat; bring to a boil. Reduce heat to simmer and replace cover so some steam can escape. Cook until potatoes are tender when pierced with a fork or knife, about 15 to 20 minutes. Drain potatoes and return to heat.
- Mash with potato masher and stir in half and half, butter, nutmeg, Dijon mustard, and season, to taste, with sea salt and freshly ground pepper.
