New York Strip Steak topped with Blue Cheese Butter





Serves 6-8
Ingredients:
| 6 New York or Kansas City Strip Steaks |
| Montreal Steak Seasoning |
| Olive Oil |
- Preheat grill to medium-high heat. Rub both sides of steaks to cover with olive oil and sprinkle with Montreal Steak Seasoning. Grill on both sides until cooked to desired doneness, about 4 minutes on each side for medium rare. Top with Blue Cheese Butter rounds; let rest, covered, 5 minutes before serving.
| 1 cup unsalted butter, room temperature |
| 1/2 cup Blue Cheese |
| 2 tablespoon fresh chives, finely minced |
| 2 cloves fresh garlic, finely minced or pressed |
| Sea Salt, to taste |
| Freshly cracked pepper, to taste |
- Mix all ingredients together in a medium bowl. Shape butter into a log shape on some plastic wrap and refrigerate until ready to use. Slice off 1/4-inch rounds and place on top of grilled steaks.
- Chef's note: Make Blue Cheese Butter a day ahead, allowing flavors to blend.
