Pesto Bruschetta

Ingredients:
| Bread: |
| 1 French baguette, sliced 1/4 -inch thick |
| Extra virgin olive oil |
| Topping: |
| 1 pint grape tomatoes, quartered |
| 4 oz. fresh mozzarella cheese, diced |
| 1/2 cup fresh pesto sauce |
| 2 teaspoons balsamic vinegar |
| Freshly shredded Parmesan cheese, for topping |
| Sea salt, to taste |
| Fresh ground pepper, to taste |
Directions:
- Preheat grill to medium heat. Brush baguette slices with olive oil and place on grill, oiled side up. Toast for 2 to 4 minutes; turn over and toast another 3 minutes or until lightly browned.
- Topping: Mix all ingredients together in medium bowl; season to taste, with salt and pepper. Spoon topping over toasted baguettes and top with Parmesan Cheese.
