Southwest Cheddar Hash Browns





Serves 4 - 6
Ingredients:
| Hash Browns: |
| 1 package Simply Potatoes Shredded Hash Browns, (20 oz.) |
| 1 medium sweet yellow onion, finely diced |
| 1 medium green bell pepper, finely diced |
| 1/2 cup redbell pepper, finely diced |
| 1/2 cup yellowbell pepper, finely diced |
| 1/2 cup orange bell pepper, finely diced |
| 6 drops chipotle or regular Tabasco sauce |
| 2 tablespoons taco or southwest seasoning |
| 2 cups finely shredded sharp cheddar cheese |
| Olive oil cooking spray |
| Salsa and sour cream, if desired |
| Fresh ground pepper, to taste |
| Sea salt, to taste |
Directions:
- Toss all hash brown ingredients together in large bowl. Preheat large nonstick skillet on medium-high heat. Spray with olive oil cooking spray.
- Add half the bowl of seasoned hash browns to hot pan and spread evenly over bottom of pan. Brown the potatoes on each side until deep golden brown, about 5 to 7 minutes. Cheese will melt and form a crust; this is the only oil you will need!
- Season to taste, with sea salt and pepper. Transfer hash browns to platter; brown remaining hash browns in pan then toss both batches together and serve hot.
- Serve with salsa and sour cream on the side, if desired.
