Pesto Pizza Burgers

Ingredients:

1 lb bulk Italian sausage, hot or mild
1 lb lean ground beef
1/2 cup pepperoni, finely diced
2 cloves garlic, pressed or finely minced
1/2 cup onion, finely chopped
1 teaspoon Italian seasoning
1/2 cup Parmesan cheese, grated or shredded
1/4 cup marinara sauce, plus more for topping
1/4 cup prepared pesto sauce, plus more for topping
8 oz fresh mozzarella cheese, cut into 8 equal-sized pieces
8 split butter Ciabatta rolls, toasted, for serving

Directions:

  1. Preheat grill to medium-high heat.
  2. In a large bowl, combine Italian sausage, ground beef, pepperoni, garlic, onion, Italian seasoning, Parmesan cheese, marinara sauce, and pesto sauce; mix well.
  3. Divide into 8 equal portions; roll into balls. Place a piece of the fresh mozzarella in the middle of each ball of meat and fully enclose. Shape into patties.
  4. Grill burgers until juices run clear, about 5 minutes per side. Transfer to platter; cover with foil and let rest 5 minutes. Place each burger on toasted Ciabatta rolls and top with more marinara and pesto sauce. Serve warm.
