Frankenstein Chunky Guacamole

Ingredients:
| 3 large avocados, pitted and scooped from skins with large spoon |
| 1 Tablespoon lemon juice |
| 1 bunch scallions, chopped, including greens |
| 1 bunch cilantro, chopped |
| 1 jalapeno pepper, seeded, and minced |
| to taste coarse salt |
| Sour Cream |
| Black Olives, Whole (you will need to slice some, for eyes, mouth and scar) |
| Blue Corn Chips |
Directions:
- Toss Avocado, lemon juice, scallions, cilantro, jalapeno pepper, and salt in a large mixing bowl.
- Spread Guacamole on a platter in the shape of Frankenstein's monster's face. Add a dollop of sour cream and sliced olive ring for the eyes. Add sliced olives for the mouth and whole olives to the side of the face for the screws. Use sliced olives to form scar on side of face. When ready to serve, add Blue Corn Tortilla Chips for the hair.
- Serve with the rest of Blue Corn Tortilla Chips
