Homemade Marshmallows

3 Packets Unflavored Gelatin Powder
1/3 Cup Cold Water
3 Cups Sugar
1 1/2 Cups Water
1 1/2 Tsp Vanilla Extract
1/4 Cup Cornstarch
1/4 Cup Powdered Sugar


  1. Combine 1/3 Cup cold water with 3 packets gelatin in a small bowl. Set aside to swell for 10 minutes.
  2. Add ½ cups water and 3 cups sugar to a saucepan over low heat. Stir constantly to dissolve the sugar.
  3. Add the water-gelatin mixture to the saucepan and stir to dissolve. Bring to a boil.
  4. Reduce heat slightly and continue to simmer for 15 minutes without stirring.
  5. Remove from the heat and add to a heat resistance bowl. Add the vanilla.
  6. Using a hand mixer, beat on high for about 10 minutes or until the mixture becomes thick.
  7. Spray a 9x13 pan or 8x8 pan, depending on how thick you want your marshmallows. Pour the mixture into the pan and set aside to harden for at least 2 hours.
  8. Once hardened, cut into squares. Combine the cornstarch and powdered sugar and sprinkle over each marshmallow.
  9. Store in an airtight container on the counter for up to one week.
