Mediterranean Layered Hummus

Ingredients:

+ Add All Ingredients to Shopping List
1 Container Prepared Original or Classic Hummus - Approximate 10 oz Size+ Add to Shopping List
1 Cup Plain Greek Yogurt+ Add to Shopping List
1/3 Cup Cucumber, seeded and diced+ Add to Shopping List
1/4 Cup Roasted Red Peppers, chopped+ Add to Shopping List
1/4 Cup Pitted Kalamata Olives, chopped+ Add to Shopping List
1/4 Cup Red Onion, diced+ Add to Shopping List
1 Tbsp Olive Oil, plus more for topping+ Add to Shopping List
1 Tbsp Fresh Parsley, chopped+ Add to Shopping List
Salt and Pepper, to taste+ Add to Shopping List
Crumbled Feta, for topping+ Add to Shopping List
Pine Nuts, for topping+ Add to Shopping List
Pita Bread, Pita Chips, Carrots, Cucumber Slices, etc. for topping+ Add to Shopping List

Directions:

  1. Chop the cucumber, roasted red pepper, kalamata olives, red onion, and parsley. Add to a small bowl with 1 Tbsp olive oil, salt and pepper. Stir to combine.
  2. Spread the hummus on a shallow serving plate.
  3. Add the Greek yogurt on top of the hummus and spread out.
  4. Spoon the vegetable mixture evenly over the top of the yogurt.
  5. Sprinkle with crumbled feta and pine nuts. Drizzle with a little extra olive oil.
  6. Serve chilled with pita bread, pita chips, crackers, carrots, cucumber slices, etc.
