Ingredients:
| 2 Tbsp Olive Oil |
| 1 Small Yellow Onion, finely diced |
| 3 Garlic Cloves, minced |
| 3/4 Tsp Turmeric |
| 1/4 Tsp Cumin |
| 1/4 Tsp Paprika |
| 1 1/4 Tsp Salt |
| 1 1/2 Cups Basmati Rice |
| 2 1/4 Cups Water |
| 2 Tbsp Cilantro, chopped |
| 2 Tbsp Flat Leaf Parsley, chopped |
| 1/2 Cup Pine Nuts |
Directions:
- Add oil to a large pot and heat over medium heat. Add the onion and sauté for 2-3 minutes or until soft and translucent. Add the garlic and sauté for 1 minutes.
- Add the turmeric, cumin, paprika, and salt. Stir to combine.
- Add the water and stir to combine.
- Pour in the rice.
- Bring to a boil.
- Once boiling, cover and reduce the heat to low. Simmer for 15-20 minutes or until the rice is tender and fluffy.
- Remove from the heat and stir in the cilantro, parsley, and pine nuts. Enjoy!
