Fajita Veggie Bowl

Ingredients:

2 -3 Cups Basmati Rice, cooked
1 Red Bell Pepper, sliced
1 Green Bell Pepper, sliced
1 White Onion, sliced
1 Packet Fajita Seasoning

Directions:

  1. Make the rice according to package instructions. Make 2-3 cups, depending on how much rice you want.
  2. Chop the peppers and onion.
  3. Heat oil in a skillet over medium-high heat. Add the peppers and onion, and sauté until tender.
  4. Add the packet of fajita seasoning along with 1 cup of water to the skillet with the veggies. Stir to combine and continue to cook for 2-3 minutes.
  5. Spoon the rice into bowls and top with the sautéed veggies. Serve warm.
