Air Fryer Vegetable Egg Rolls

Ingredients:
3 Cups Cabbage Slaw Mix
1 Bunch Green Onions, chopped
1/2 Cup Red Bell Pepper, finely chopped
1/3 Cup Whole Flaxseed
3 Tsp Reduced Sodium Soy Sauce
1 Tsp Red Pepper Flakes
8 -10 Egg Roll Wrappers
Egg Whites from 2 Large Eggs
2 Tsp Water
2 Tsp Cornstarch
Directions:
Slice the red bell pepper and green onions.
Combine the cabbage slaw, green onion, red bell pepper, flaxseed, soy sauce, and red pepper flakes in a large bowl. Mix well.
Whisk the egg whites, water, and cornstarch in a small bowl.
Use a brush to wet the edges of an egg roll wrapper with the egg mixture.
Place a heaping spoonful of the slaw mixture on the egg roll wrapper, near one of the corners.
Fold the corner over the mixture, then fold both sides in, and roll the rest of the wrapper to seal all edges.
Set aside and continue to make the rest of the egg rolls. The recipe will make 8-10 egg rolls.
Brush the outside of each egg roll with the egg mixture, making sure to coat both sides.
Place the egg rolls in the air fryer basket in a single layer. Fry at 400 degrees for 8-10 minutes or until brown and crispy. Make sure to flip halfway through cooking. Cook in batches if needed, depending on how many will fit in the air fryer at one time.
Serve warm with your favorite dipping sauce - soy sauce, sweet and sour sauce, sweet chili sauce, etc.
