Ingredients:
| 1 Can Rotel Original Diced Tomatoes & Green Chilies |
| 1 14.5oz Can Whole Tomatoes, plus juice from can |
| 2 Tbsp Jalapeno, diced |
| 1/2 Cup Yellow Onion, diced |
| 4 Cloves Garlic, minced |
| 2 Tbsp Cilantro, chopped |
| 1 Tsp Sea Salt |
| 1/2 Tsp Cumin |
| 1/2 Tsp Sugar |
| 1 1/2 Tbsp Lime Juice |
Directions:
- Slice the jalapeno and yellow onion. Add to a food processor and pulse for a few seconds.
- Add the entire can of Rotel and the entire can of tomatoes, juicy included, to the food processor. Also add the garlic, cilantro, salt, cumin, sugar, and lime juice. Pulse until well blended but do not puree - you want chunky salsa.
- Pour the salsa into a bowl. Cover and place in the fridge for at least 2 hours before serving. This will help the flavors blend together.
- Serve chilled with tortilla chips. Store any leftovers in the fridge.
