Creamy Hummus Pasta (Vegan)

Ingredients:

10 oz Penne Pasta
10 oz Sabra Classic Hummus
2 Cups Baby Spinach
12 oz Jar Marinated Artichokes, undrained
1 Cup Grape Tomatoes, halved
1 Tbsp Lemon Juice
1 Cup Pitted Kalamata Olives, halved
1 Tsp Salt
1 Tsp Garlic Powder
1 Tsp Black Pepper

Directions:

  1. Bring a pot of water to a boil and cook the noodles according to package instructions.
  2. While the pasta is boiling, slice the tomatoes and drain and slice the olives.
  3. Once the pasta is done, drain and place in a large mixing bowl. Add the hummus and jar of artichokes, including the liquid from the jar, and stir to combine.
  4. Add the lemon juice, salt, pepper, and garlic powder. Stir to combine.
  5. Add the spinach, tomatoes, and olives. Stir to combine.
  6. Taste and adjust the seasoning if necessary. Serve and enjoy! This pasta can be served warm or cold.
