1 lb Boneless Skinless Chicken Breasts, cut into thin strips
1 Green Bell Pepper, thinly sliced
1 Red Bell Pepper, thinly sliced
1 Yellow Bell Pepper, thinly sliced
1 White Onion, thinly sliced
1/4 Tbsp Chili Powder
1/4 Tbsp Chipotle Chili Powder
1/2 Tsp Salt
1/2 Tsp Cumin
1/2 Tsp Oregano
1/2 Tsp Garlic Powder
1/2 Tsp Onion Powder
1/2 Tsp Black Pepper
Tortilla Shells, optional, for serving
Shredded Cheese, optional, for serving
Directions:
Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
Slice the peppers, onion, and chicken. Set aside.
In a small mixing bowl, combine the chili powder, chipotle chili powder, salt, cumin, oregano, onion powder, garlic powder, and black pepper. Set aside.
Add the peppers and onion to the baking sheet.
Place the chicken strips on top of the peppers and onion.
Lightly spray the top with cooking spray. Sprinkle the seasoning mixture evenly over the top.
Bake for 15 minutes, stir, then bake for an additional 15 minutes.
Serve hot and eat as is or build a fajita with a tortilla shell and cheese. Enjoy!
