Breakfast Burger

Serves 4


Ingredients:

1 Box Waffle Mix, plus package ingredients
4 Hamburger Patties (store-bought or homemade) or 4 Boneless Skinless Chicken Breasts
Salt & Pepper, for seasoning
Lowry's Seasoned Salt, for seasoning
4 Slices Cheddar Cheese
8 Slices Bacon, cooked
8 Large Eggs, whisked
Maple Syrup, for topping
Breakfast Potatoes or Hash Browns, for serving, optional

Directions:

  1. Make 1-2 batches of waffles according to package instructions. A Mini Waffle Maker works well as the waffles are the size of a hamburger bun. Belgian waffles also work well as they can be broken into 4 pieces to be used as a hamburger bun. You want enough waffles to make 4 burgers. You can also skip this step and use hamburger buns if you prefer.
  2. Cook the bacon according to package instructions. Set aside.
  3. If you purchased unseasoned beef patties or are making your own patties, it’s recommended to season both sides with salt, pepper, and Lowry’s Seasoned Salt before cooking. You can skip this step if you are using seasoned beef patties. If using chicken breasts, season both sides with salt, pepper, and Lowry’s Seasoned Salt.
  4. Heat a skillet over medium heat and cook the hamburger patties or chicken breasts until cooked through. The chicken should have an internal temperature of 165 degrees F.
  5. Preheat the oven to 300 degrees. Place the hamburgers or chicken on a baking sheet. Top each with 1 slice of cheddar cheese. Place in the oven for 2-3 minutes or until the cheese is melted.
  6. Crack 8 eggs into a mixing bowl and whisk together. Pour into a skillet over medium heat and cook until light and fluffy. Season with salt and pepper. You can substitute scrambled eggs for fried eggs if you prefer.
  7. Assemble the burgers. Start with a waffle on the bottom. Place a hamburger or chicken breast on top. Add 2 slices of bacon and a heaping scoop of scrambled eggs. Top with another waffle. Repeat this step until all burgers have been assembled.
  8. Drizzle maple syrup over the top. Serve warm with a side of breakfast potatoes or hash brown. Enjoy!
