Cheese Stuffed Taco Burger

Ingredients:

1 lb Ground Beef or 1 lb Ground Chicken
1 Package McCormick Taco Seasoning
4 Slices Cheddar Cheese
4 Brioche Buns
Lettuce, for topping
Pico de Gallo, for topping
Guacamole, for topping
Tortilla Chips & Salsa, for serving, optional
  1. In a medium bowl, add the ground beef OR ground chicken with the entire packet of taco seasoning. Mix until well combined. Portion into 4 equal parts.
  2. Fold each piece of cheese into quarters and stack the pieces on top of each other. Form the meat into 4 large patties. Place one stack of cheese in the center and fold the edges around to enclose the cheese. You want the sides to be well sealed. Repeat until you have 4 cheese stuffed burger patties.
  3. Heat a skillet over medium heat and cook the hamburger patties or chicken breasts until cooked through.
  4. Make the guacamole (see recipe below). Add all ingredients to a bowl and toss to combine. Season with coarse salt, to taste. Set aside.
  5. Assemble the burgers. Start with a bun on the bottom. Add lettuce then the burger patty. Top with a heaping scoop of the guacamole, then add Pico de Gallo. Place the other half of the bun on top. Repeat this step until all burgers have been assembled.
  6. Serve warm with chips, salsa, and leftover guacamole on the side. Enjoy!
Guacamole (Chunky)
3 Ripe Avocados, pitted and removed from the skin
1 Tbsp Lemon Juice
1 Bunch Green Onions, sliced
1 Bunch Fresh Cilantro, chopped
1 Jalapeno, seeded and diced
Coarse Salt, to taste
  1. Add all ingredients to a bowl and toss to combine. Season with coarse salt, to taste.
