Chicken & Broccoli Pasta Salad





Ingredients:
| 16 oz Radiatore Pasta |
| 1 lb Boneless Skinless Chicken Breasts, cooked and cubed |
| 1 Small Head of Broccoli, cut into florets |
| 3/4 Cup Golden Raisins |
| 3/4 Cup Celery, diced |
| 3/4 Cup Sunflower Seeds |
| 1 Bunch Green Onion, sliced |
| 1 Cup Mayonnaise |
| 3/4 Cup Plain Greek Yogurt |
| 2 Tbsp Honey |
| 3 Tsp Dijon Mustard |
| 2 Tsp Salt |
| 1 Tsp Black Pepper |
| 2 Tsp Italian Seasoning |
- Bring a large pot of water to a boil and cook the pasta according to package instructions. Drain and rinse under cold water until the pasta is completely cool. Set aside.
- Prepare the rest of the ingredients; cube the (pre-cooked) Chicken, chop the broccoli, celery, and green onions.
- Add the pasta, chicken, broccoli, raisins, celery, sunflower seeds, and green onion to a large mixing bowl. Mix to combine.
- In a separate mixing bowl, whisk together all dressing ingredients until smooth; mayonnaise, yogurt, honey, mustard, salt, pepper, and Italian seasoning.
- Pour the dressing over the pasta salad and stir to coat and combine. Cover and refrigerate for at least one hour or until ready to serve. Enjoy!
