Jalapeno Popper Stuffed Chicken





Ingredients:
| 2 Boneless Skinless Chicken Breasts |
| 6 oz Cream Cheese, softened |
| 1/3 Cup Shredded Cheddar Cheese |
| 1-2 Jalapenos, seeded and diced |
| Salt, to taste |
| Black Pepper, to taste |
| Paprika, to taste |
| Olive Oil |
Directions:
- Preheat the oven to 400 degrees F. Spray an 8x8 baking dish with cooking spray.
- Butterfly each chicken breast by slicing in half, lengthwise, about ¾ of the way. You want the chicken breast to fold open so don’t slice the whole way through.
- In a small bowl, mix together the cream cheese, cheddar cheese, and jalapenos.
- Stuff the chicken breasts with the jalapeno mixture and use toothpicks to hold the edges together. Place the chicken in the prepared baking dish.
- Sprinkle the tops of the chicken with salt, pepper, and paprika. Drizzle olive oil over the top.
- Bake, uncovered, for 35-40 minutes or until the internal temperature of the chicken is 165 degrees F.
- Serve warm with a side of cooked vegetables. Enjoy!
