Baked Scallops on the Shell

Ingredients:

4 Scallop Shells
8 Large Scallops
1/3 Cup Breadcrumbs
2 Tbsp Butter, divided
1 Lime
4 Tsp Olive Oil, divided
2 Tsp Garlic Powder, divided
2 Tsp Salt, divided
1 Tsp Black Pepper, divided

Directions:

  1. Preheat the oven to 450 degrees F. Place the scallop shells on a baking sheet.
  2. Make sure the scallops are completely thawed, if using frozen, and pat dry.
  3. Add the scallops and breadcrumbs to a large bowl. Toss to evenly coat.
  4. Place 2 scallops in each shell. Add any remaining breadcrumbs on top.
  5. Add ½ Tbsp butter on top of each scallop-filled shell.
  6. Add 1 Tsp olive oil, ½ tsp garlic powder, ½ tsp salt, and ¼ tsp black pepper on top of each scallop-filled shell.
  7. Squeeze lime juice on top of each scallop-filled shell.
  8. Bake for 25 minutes or until the inside has turned opaque in color.
  9. Carefully remove the shells to a serving platter and serve warm with a side of steamed vegetables or pasta. Enjoy!
