Stuffed Chicken Parmesan Meatloaf

Ingredients:

2 lbs Ground Chicken+ Add to Shopping List
2 Cups Marinara Sauce, divided+ Add to Shopping List
5-6 Garlic Cloves, minced & divided+ Add to Shopping List
4 Tbsp Fresh Chopped Parsley, divided+ Add to Shopping List
2 Tsp Italian Seasoning+ Add to Shopping List
2 Tsp Onion Powder+ Add to Shopping List
2 1/2 Tsp Salt, divided+ Add to Shopping List
1 Tsp Black Pepper, divided+ Add to Shopping List
1/2 Cup Ricotta Cheese+ Add to Shopping List
1 Cup Shredded Mozzarella Cheese, divided+ Add to Shopping List
1 Cup Shredded Parmesan Cheese, divided+ Add to Shopping List

Directions:

  1. Preheat the oven to 400 degrees F. Line a loaf pan with parchment paper. This will help you easily lift out the meatloaf when done cooking.
  2. In a large mixing bowl, combine the ground chicken, ¼ cup marinara sauce, 4-5 cloves of garlic (minced), 2 Tbsp parsley, Italian seasoning, onion powder, 2 tsp salt, and black pepper. Mix well to combine. Divide into 2 equal portions.
  3. In a separate mixing bowl, combine the ricotta, ½ cup mozzarella, ½ cup parmesan, 2 Tbsp parsley, 1 garlic clove (minced), and ½ tsp salt. Mix until well combined.
  4. Add ½ of the meat mixture to the loaf pan and press down to evenly to coat the bottom.
  5. Add the cheese mixture in along the center of the pan.
  6. Add the other ½ of the meat mixture and press down to fully seal the cheese in the middle. Try to keep the top of the meatloaf in an even layer for more consistent cooking.
  7. Bake for 20 minutes. Remove from the oven and add ½ cup marinara sauce to the top. Spread around to evenly coat the top. Sprinkle the other ½ cup mozzarella and ½ cup parmesan over the top.
  8. Bake for an additional 20 minutes.
  9. Remove the meatloaf from the oven and use the parchment to carefully remove the meatloaf from the pan. Slice and serve with additional marinara sauce on the side. Enjoy!
