Instant Pot Garlic Chicken Pasta





Ingredients:

1 lb Boneless Skinless Chicken Breasts, slice into 1-inch pieces+ Add to Shopping List |
1 1/2 Tsp Salt+ Add to Shopping List |
3 Tsp Italian Seasoning+ Add to Shopping List |
2 Tsp Paprika+ Add to Shopping List |
1 Tsp Garlic Powder+ Add to Shopping List |
1/2 Tsp Black Pepper+ Add to Shopping List |
2 Tbsp Olive Oil+ Add to Shopping List |
1 White Onion, diced+ Add to Shopping List |
16 oz Dried Pasta, any variety+ Add to Shopping List |
3 Cups Chicken Broth+ Add to Shopping List |
4 Tbsp Unsalted Butter+ Add to Shopping List |
1 1/4 Cup Heavy Cream+ Add to Shopping List |
2 oz Cream Cheese+ Add to Shopping List |
1 Cup Grated Parmesan Cheese+ Add to Shopping List |
Fresh Basil, chopped, for garnish+ Add to Shopping List |
Directions:
- Add the salt, Italian seasoning, paprika, garlic powder, and black pepper to a large Ziploc bag. Add the sliced chicken. Seal the bag and shake to coat the chicken.
- Add the olive oil to the Instant Pot and turn on the SAUTE setting. Once hot, add the chicken and cook until cooked through, about 5 minutes.
- Add the chopped onion and stir to combine.
- Turn off the SAUTE setting and add a small amount of the chicken broth to deglaze the bottom of the Instant Pot. Then, add the dried pasta and the rest of the chicken broth. Stir to combine.
- Close the lid and make sure the valve is in the “sealed” position. Turn the Instant Pot on and cook on manual, high pressure, for 5 minutes. Quick release the steam when done.
- Add the butter, cream cheese, heavy cream, and parmesan cheese. Stir to combine and melt the butter and cream cheese.
- Serve immediately and garnish with fresh chopped basil. Enjoy!
