Jalapeno Popper Chicken Casserole





Ingredients:
+ Add All Ingredients to Shopping List
2 lbs Boneless Skinless Chicken Breast (cooked) or Rotisserie Chicken, shredded+ Add to Shopping List |
1 Tsp Garlic Powder+ Add to Shopping List |
1 Tsp Paprika+ Add to Shopping List |
1 Tsp Black Pepper, optional+ Add to Shopping List |
8 oz Cream Cheese, softened+ Add to Shopping List |
1/2 Cup Heavy Cream+ Add to Shopping List |
1/4 Cup Chicken Stock+ Add to Shopping List |
5-6 Jalapeno Peppers, seeded and sliced+ Add to Shopping List |
8 oz Sharp Cheddar Cheese, shredded+ Add to Shopping List |
4-5 Strips of Bacon, cooked and crumbled+ Add to Shopping List |
Directions:
- Cook the bacon according to package instructions. If you are using rotisserie chicken, shred the chicken. If you are using boneless skinless chicken breasts, cook and shred.
- Preheat the oven to 375 degrees F.
- Spread the chicken in a 9x13 baking dish. Season with garlic powder, paprika, and pepper (optional).
- Whisk together the heavy cream, chicken stock, and cream cheese. Spread in an even layer over the chicken.
- Remove the tops of the jalapenos and slice in half. Remove any seeds. Slice into strips. Lay on top of the cream cheese in an even layer.
- Sprinkle the cheddar cheese over the top.
- Bake for 20 minutes. Remove from the oven and sprinkle the bacon over the top. Bake for another 5 minutes.
- Slice and serve warm. Enjoy!
