Breakfast Pizza with Hash Brown Crust





Ingredients:

20 oz Simply Potatoes Hash Browns+ Add to Shopping List |
8 Large Eggs+ Add to Shopping List |
3/4 Cup Shredded Cheddar Cheese+ Add to Shopping List |
1/4 Cup Shredded Mozzarella Cheese+ Add to Shopping List |
1/2 Cup Bell Pepper, any color, diced+ Add to Shopping List |
1/2 Cup Onion, any variety, diced+ Add to Shopping List |
1 Tsp Salt+ Add to Shopping List |
1/2 Tsp Black Pepper+ Add to Shopping List |
Directions:
- Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper. Lightly spritz with cooking spray.
- In a large bowl, combine the hash browns, 2 eggs, ½ cup cheddar cheese, ½ tsp salt, and ¼ tsp black pepper. Mix well. Pour onto the baking sheet and flatten into a thin layer that is oval shaped.
- Bake for 20 min or until golden brown.
- While the crust is baking, chop the bell pepper and onion.
- Remove the crust from the oven. Sprinkle ¼ cup cheddar cheese and ¼ cup mozzarella cheese over the top. Crack 6 eggs on top of the cheese. Sprinkle the bell pepper and onion evenly over the top of the eggs and cheese. Sprinkle ½ tsp salt and ¼ tsp black pepper over the top.
- Bake for an additional 15-20 min or until the eggs are cooked to a desired consistency.
- Slice and serve warm.
- ***Add any additional toppings of your choosing - spinach, crumbled bacon, breakfast sausage, mushrooms, etc.
- ***Another option would be to scramble the eggs before pouring over the top.
