Ingredients:
1 Sheet Frozen Puff Pastry, thawed 4 Slices Bacon, cooked and chopped 1 1/2 Cups Havarti Cheese, shredded 4 Tbsp Parmesan Cheese, shredded 4 Large Eggs Salt and Pepper, to taste Fresh Chives, chopped, for garnish
Directions: Cook the bacon according to package instructions. Remove to a paper towel lined plate to drain the excess grease. Chop and set aside. Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper. Gently unroll the puff pastry on the counter. Use a rolling pin to flatten slightly, until the dough is approximately a 12-inch square. Slice into 4 squares. Slightly fold the edges of the pastry to create a slight lip on the edge. Transfer to a baking sheet. Prick each pastry all over with a fork. Bake for 8-10 minutes or until golden brown. Use a fork to prick the pastries to deflate if puffed up while baking. Divide the Havarti and parmesan cheese between the pastries. Create a well in the center of the cheese. Crack an egg in each well. Season with salt and pepper, to taste. Sprinkle the bacon evenly over the top. Bake for an additional 10-15 minutes or until the egg whites are set. Top with chopped chives and serve immediately. Enjoy!
