Broccoli & Bacon Quiche with Pepper Jack Cheese





Ingredients:
| 1 Refrigerated Pie Crust |
| 1/4 Small Red Onion, diced |
| 1/2-1 Cup Chopped Broccoli, from Simply Steam Freezer Bag |
| 4-5 Strips Bacon, cooked and chopped |
| 3 Large Eggs |
| 1 1/4 Cups Milk, 2% works well |
| 1 Tsp Salt |
| 1/2 Tsp Black Pepper |
| 2 Tbsp Fresh Chives, chopped |
| 1 1/2 Cups Pepper Jack Cheese, shredded |
Directions:
- Let the pie crust sit on the counter for 10-15 minutes to soften. Then, unroll and place in a 9-inch pie plate. Crimp the edges. Set aside.
- Preheat the oven to 350 degrees F.
- Microwave the broccoli according to package instructions. Set aside to cool slightly.
- Cook the bacon according to package instructions. Transfer to a paper towel lined plate. Once cool, chop.
- Dice the onion.
- In a large mixing bowl, whisk together the milk, eggs, salt, pepper, and chives.
- Add the broccoli, onion, bacon, and shredded cheese to the pie plate. Pour the egg mixture over the top.
- Bake, uncovered, for 45-50 minutes or until the eggs are set. Once done, turn off the oven and prop the oven door open for 10-15 minutes. This will help the quiche cool slightly and continue to set.
- Slice and serve warm. Enjoy!
