Broccoli & Bacon Quiche with Pepper Jack Cheese

Ingredients:
1 Refrigerated Pie Crust
1/4 Small Red Onion, diced
1/2-1 Cup Chopped Broccoli, from Simply Steam Freezer Bag
4-5 Strips Bacon, cooked and chopped
3 Large Eggs
1 1/4 Cups Milk, 2% works well
1 Tsp Salt
1/2 Tsp Black Pepper
2 Tbsp Fresh Chives, chopped
1 1/2 Cups Pepper Jack Cheese, shredded
Directions:
Let the pie crust sit on the counter for 10-15 minutes to soften. Then, unroll and place in a 9-inch pie plate. Crimp the edges. Set aside.
Preheat the oven to 350 degrees F.
Microwave the broccoli according to package instructions. Set aside to cool slightly.
Cook the bacon according to package instructions. Transfer to a paper towel lined plate. Once cool, chop.
Dice the onion.
In a large mixing bowl, whisk together the milk, eggs, salt, pepper, and chives.
Add the broccoli, onion, bacon, and shredded cheese to the pie plate. Pour the egg mixture over the top.
Bake, uncovered, for 45-50 minutes or until the eggs are set. Once done, turn off the oven and prop the oven door open for 10-15 minutes. This will help the quiche cool slightly and continue to set.
