Scalloped Potatoes with Ham





Serves 12
Ingredients:

1/4 cup butter+ Add to Shopping List |
1 large sweet yellow onion, finely chopped+ Add to Shopping List |
2 cups shredded sharp cheddar cheese, divided+ Add to Shopping List |
1/4 cup flour+ Add to Shopping List |
1 cup heavy cream+ Add to Shopping List |
2 cups milk+ Add to Shopping List |
1 tablespoons chopped fresh parsley, or 1/2 tablespoon dried parsley+ Add to Shopping List |
1/8 teaspoon ground nutmeg+ Add to Shopping List |
6 cups thinly sliced potatoes (or 2 - 20 oz. bags of Simply Potatoes sliced or shredded hash brown potatoes)+ Add to Shopping List |
3 cups cooked diced smoked ham, (Great with leftover ham!)+ Add to Shopping List |
Chopped fresh chives, for garnish+ Add to Shopping List |
Seasoned salt+ Add to Shopping List |
Freshly ground pepper+ Add to Shopping List |
Directions:
- Preheat oven to 375 degrees F. Butter a 9 X 13-inch baking dish; set aside.
- Preheat large skillet over medium-high heat; add butter and onions and sprinkle with seasoned salt and pepper. Cook until translucent, about 5 minutes then sprinkle with flour and stir well for about 1 minute to cook out floury taste. Whisk in heavy cream, milk, parsley, and nutmeg and season to taste with seasoned salt and pepper.
- Remove from heat and stir in sliced potatoes and ham. Layer half of the potato mixture into prepared baking dish and sprinkle top with 1 cup of the shredded cheddar. Repeat with second layer; cover with foil and bake 1 hour.
- Remove cover and bake another 15 minutes to brown top. Serve hot garnished with fresh chopped chives and buttered rolls on the side.
