Chipotle Sliders

Serves 12 slicers


Ingredients:

1 lb. lean ground beef
1 package frozen Chorizo Mexican sausage, (14 oz)thawed
1 cup chopped sweet yellow onion
1 teaspoon Adobo seasoning
2 tablespoons Chipotles in Adobo Sauce, minced
12 slices Pepper Jack Cheese, for topping
12 butter toasted slider buns, (Bakery Dollar or Hawaiian buns work well)
Chipotle or Southwestern flavored Mayonnaise, for serving
12 slices semi-ripe Avocado, for serving
12 slices Roma tomato, for serving

Directions:

  1. In a large bowl, mix together the ground beef, Chorizo, chopped onion, Adobo seasoning and minced Chipotles in Adobo Sauce with gloved hands. Shape into 12 equal-sized patties.
  2. Preheat Grill to medium-high heat. Grill burgers until juices run clear, about 4 minutes per side or until internal temperature reaches 160 degrees F. Place Pepper Jack cheese slices on top of burgers the last minute of grilling time.
  3. To assemble burgers: spread both cut sides of buns with chipotle mayo then layer with cooked burger, avocado slices, tomato slices, and top buns.
