Pesto Arugula Turkey Burger





Serves 4
Ingredients:
1 Lb Ground Turkey |
1/4 Cup Sun Dried Tomatoes in Oil, drained and chopped |
1/4 Cup Shredded Parmesan Cheese |
2 Garlic Cloves, minced |
1 Tsp Salt |
1/2 Tsp Pepper |
4 Slices Fresh Mozzarella |
4 Hamburger Buns |
Pesto, homemade or store-bought |
Baby Arugula |
Directions:
- In a medium bowl, mix together the ground turkey (or ground chicken), sun dried tomatoes, parmesan cheese, garlic, salt, and pepper. Form into 4 equal sized patties.
- Heat a skillet over medium heat. Cook burgers for 5-6 minutes on each side.
- During the last minute of cooking, top each burger with a slice of mozzarella.
- Slice hamburger buns. Spread a thin layer of pesto on the bottom half. Place a handful of arugula on top,then place the burger on top of the arugula. Spread more pesto on the top half of the bun, and place on top of the burger.
