Pesto Arugula Turkey Burger

|1 Lb Ground Turkey|
|1/4 Cup Sun Dried Tomatoes in Oil, drained and chopped|
|1/4 Cup Shredded Parmesan Cheese|
|2 Garlic Cloves, minced|
|1 Tsp Salt|
|1/2 Tsp Pepper|
|4 Slices Fresh Mozzarella|
|4 Hamburger Buns|
|Pesto, homemade or store-bought|
- In a medium bowl, mix together the ground turkey (or ground chicken), sun dried tomatoes, parmesan cheese, garlic, salt, and pepper. Form into 4 equal sized patties.
- Heat a skillet over medium heat. Cook burgers for 5-6 minutes on each side.
- During the last minute of cooking, top each burger with a slice of mozzarella.
- Slice hamburger buns. Spread a thin layer of pesto on the bottom half. Place a handful of arugula on top,then place the burger on top of the arugula. Spread more pesto on the top half of the bun, and place on top of the burger.
