Ingredients:
1 lb Large Shrimp, thawed and deveined
4 Tbsp Olive Oil, divided
6 Garlic Cloves, minced
1 Tsp Salt
1/2 Tsp Red Pepper Flakes
4 Tbsp Unsalted Butter
1/3 Cup Dry White Wine
Juice from 1/2 a Lemon
1 1/2 Tbsp Flat Leaf Parsley, minced
Grated Parmesan Cheese, for garnish
Angel Hair or Spaghetti Noodles, for serving
Directions:
- Add the shrimp, 2 Tbsp olive oil, 3 minced garlic cloves, ½ tsp salt, and the red pepper flakes to a mixing bowl. Stir to combine and set aside to marinate for 15-20 minutes.
- Bring a large pot of salted water to a boil and cook the noodles according to package instructions. Drain and set aside.
- Heat the remaining 2 Tbsp olive oil in a large skillet over medium heat. Add the shrimp and cook for 2-3 min per side or until cooked through. They should be opaque in color. Remove to a plate and set aside.
- Add 3 Tbsp butter to the skillet and melt over medium heat. Add the remaining 3 garlic cloves and cook for 30 seconds. Add the white wine and lemon juice and let simmer for about 5 minutes. The mixture should reduce by half.
- Add the shrimp back to the skillet and stir to combine. Add the remaining Tbsp butter, ½ tsp salt, and the minced parsley. Stir to combine. Let heat for 1-2 minutes, stirring occasionally.
- To serve, add a scoop of noodles to a bowl. Top with shrimp and some sauce from the pan. Sprinkle with parmesan cheese and enjoy!
