Preheat the oven to 425 degrees F and line 2 baking sheets with parchment paper.
Melt the butter in a saucepan over low heat. Add the apples, brown sugar, cinnamon, and salt. Stir to combine and continue to heat, stirring occasionally, for about 5 minutes. Remove from the heat to cool slightly.
Arrange the wonton wrappers on the counter. Add 1 Tbsp of the apple mixture to the center of each wonton. Use a finger to brush milk along the edges and fold each wrapper into a triangle shape. Use milk along the edges and pinch to completely seal. Place on the prepared baking sheets.
Brush milk over the top of each wonton then lightly spritz with cooking spray.
Bake for 10-12 minutes or until lightly browned and starting to crisp up.
Remove from the oven and transfer to a serving platter. Sprinkle with powdered sugar (optional).
While the wontons are baking, make the caramel dipping sauce. Add the sugar to a large saucepan. Heat over medium heat until completely melted and starting to turn a golden-brown color.
Reduce the heat to low and slowly pour in the heavy cream while stirring. The mixture will bubble and steam – this is OK. Continue to stir until completely combined and smooth.
Add the salt and vanilla and stir to combine. Remove from the heat and transfer to a serving bowl.
Serve immediately with the wontons while still hot. Enjoy!
