3 Large Baking Potatoes, washed and cut into 1-inch pieces
4 Tbsp Butter
Salt & Pepper
1 Cup Cheddar Fondue, Queso, or Beer Cheese Sauce
2 Cups Shredded Cheddar Cheese
1 lb Bacon, cooked and crumbled
Top the Tater, Seasoned Sour Cream, or Regular Sour Cream
Fresh Chopped Chives, for garnish
Directions:
Preheat the oven to 400 degrees F. Cut the butter into thin pieces and place half in the bottom of a 9-inch cast iron skillet. Add the potatoes and season liberally with salt and pepper. Add the other half of the sliced butter over the top of the potatoes.
Cover with foil and bake for 40-50 minutes or until cooked through (easily pierced with a fork). Stir the potatoes after 30 min to ensure they are not sticking to the skillet.
While the potatoes are baking, cook the bacon according to package instructions. Add the bacon to a food processor and pulse until it resembles fine crumbs. Set aside.
Remove the foil and top the potatoes with the cheese sauce. Spread over the top. Add the shredded cheese evenly over the top.
Return to the oven (uncovered) and bake until the cheese has melted, 2-3 minutes.
Add the bacon and spread evenly over the top. Add a large dollop of sour cream to the center and garnish with chives.
Serve immediately and enjoy! Season with additional salt and pepper as needed, once served.
