Mini Cheeseburger Bites

Ingredients:

30 Potato Crowns, frozen
1 lb Lean Ground Beef
1 Tsp Salt
1 Tsp Black Pepper
1 Tsp Onion Powder
3-4 Slices Cheddar Cheese
5 Strips of Bacon
Ketchup & Mustard, for serving, optional

Directions:

  1. Cook the bacon according to package instructions. Remove to a paper towel lined plate to drain the excess grease. Once cool, cut each strip into 6 squares (total of 30 pieces).
  2. Preheat the oven to 400 degrees F. Line 2 baking sheets with parchment paper.
  3. Arrange the potato crowns in 6 rows of 5 on one of the baking sheets. Bake for 20 minutes, flipping after 10 minutes. Once cooked, remove from the oven and set aside.
  4. Meanwhile, add the beef, salt, pepper, and onion powder to a mixing bowl. Mix until well combined. Transfer to the counter and press down until about ¼ - ½ inches thick. Use a round cookie cutter or biscuit cutter that is 1-inch in diameter to cut out 30 round burgers. Arrange the burgers on the second baking sheet in 6 rows of 5. Bake for 10 minutes.
  5. Cut each slice of cheese into 9 pieces. Set aside.
  6. Place one burger on top of each potato crown. Add a slice of cheese and piece of bacon to each. Return to the oven for 2-3 minutes to melt the cheese.
  7. Transfer to a serving platter and serve immediately, while hot. Enjoy!
  8. Any leftovers should be cooled completely and stored in an airtight container in the fridge.
