Place the chicken in the bottom of the baking dish. Sprinkle the fajita seasoning over the top.
Add the sliced bell peppers and sliced onion on top of the chicken.
Bake for 20 minutes. Remove from the oven and top with the shredded cheese. Bake for an additional 15-20 minutes or until the chicken is cooked through and the veggies are tender. The chicken should have an internal temperature of 165 degrees F.
Garnish with fresh chopped cilantro. Serve and enjoy!
