Chicken Pesto Mozzarella Uncrustables





Ingredients:
| 1 Cup Cooked Chicken Breast, shredded (or use rotisserie chicken) |
| 1/4 Cup Pesto |
| 1/3 Cup Shredded Mozzarella Cheese |
| 2 Tbsp Cream Cheese, softened |
| 1/4 Cup Diced Tomatoes, drained if juicy |
| 1/4 Tsp Garlic Powder |
| Pinch of Salt |
| Pinch of Black Pepper |
| 8 Slices of Bread (white, wheat, brioche) |
| Cooking Spray |
Directions:
- Start by making the filling. Add the chicken, pesto, mozzarella, cream cheese, and diced tomatoes to a mixing bowl. Mix until well combined.
- Season with garlic powder, salt, and pepper. Mix until well combined.
- Assemble the Uncrustables. Lay out slices of bread and place 2-3 Tbsp of the filling in the center of half the slices. Place the remaining bread slices on top.
- Use a fork or Uncrustable sealer to crimp the edges, removing the crust if desired.
- Cook using the OVEN METHOD: Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. Lightly spray the top and bottom of the Uncrustables with cooking spray. Bake for 10-12 minutes or until golden brown.
- Cook using an AIR FRYER: Lightly spray the top and bottom of the Uncrustables with cooking spray. Place in the basket of the air fryer (cook in batches if needed). Air fry at 375 degrees F for 6-7 minutes, flipping halfway.
- Let sit and cool slightly before serving. Enjoy while still warm!
