Grilled Salmon with Blackberry Sauce

Ingredients:
1/4 Cup Unseasoned Rice Vinegar
1 Cup Fresh Blackberries
3 Tbsp Honey
1 1/2 Tsp Fresh Ginger, grated
2 Tsp Lemon Juice
1 Tsp Sesame Oil
Salt and Pepper, to taste
1-1 1/2 lbs Salmon (skin on)
2 Tbsp Chili Garlic Sauce
Directions:
Preheat your grill to medium-high heat and liberally oil the grates.
Add the rice vinegar, blackberries, honey, ginger, lemon juice, sesame oil, and a sprinkle of salt and pepper to a blender and blend until smooth. Set aside.
Brush the chili garlic sauce over the top of the salmon (you don’t need to brush the skin side).
Place the salmon on the grill, skin side down. Grill for approximately 10-15 minutes or until the center is cooked through (145 degrees F), the salmon is opaque and easily flakes with a fork.
Remove to a cutting board. Slice into individual fillets and serve with the blackberry sauce drizzled over the top. Enjoy!
