Chorizo Nachos

Serves 4


1/2 bag Mexican chips
4 links fresh chorizo sausage, casings removed
4 cups asadero cheese, shredded, about 1/2 pound
1 cup peppsdews, chopped
3 green onions, chopped
1/2 cup cilantro, chopped
Pico de Gallo
Hot Sauce


  1. Cook chorizo in skillet, breaking up while cooking to resemble ground beef. When fully cooked, remove and set aside.
  2. Spread out all chips on baking sheet. Sprinkle all chorizo over chips, then peppadews, cheese & green onions. Bake at 350 degrees until cheese is fully melted, about 15-20 minutes. Remove and sprinkle with cilantro, pico de gallo and your favorite hot sauce. Serve immediately!
