Roasted Elephant Garlic

Serves 6


Ingredients:

1 head elephant garlic
1 tablespoon olive oil
1 sprig rosemary or thyme
Aluminum foil

Directions:

  1. With a sharp knife cut off top fourth of head of garlic, exposing all cloves. Place on a square piece of foil drizzled with olive oil and herbs. Wrap tightly, place on baking sheet and bake at 350 degrees F for 1 hour.
  2. Cool and squeeze out all the yummy garlic. Spread on bread or toss in pasta!
